How Much Meat Per Person for a BBQ or Churrasco

Buy too little and the grill goes quiet before the party does. Buy too much and you're freezing leftovers for weeks. These are the numbers we use at the counter when customers plan birthdays, game days, and backyard churrascos.

The rule of thumb

  • Regular BBQ with plenty of sides: about ½ lb (225 g) of boneless raw meat per adult.
  • Meat-focused churrasco or asado: about ¾ to 1 lb (340–450 g) per adult. When one meat after another comes off the grill, people eat more.
  • Kids: about half an adult portion.
  • Bone-in cuts (ribs, bone-in chicken, T-bones): add 30–50% more weight, since the bone doesn't get eaten.

A balanced churrasco mix

A good churrasco has variety and pacing. For 20 adults, about 18 lb in total, a mix like this works well:

Serve the sausage and chicken first. They cook fast, keep people happy, and take the edge off the hunger before the picanha comes off the grill.

What changes the math

  • Length of the party: a long afternoon eats more than a two-hour dinner.
  • The crowd: teenagers and athletes can eat twice the average.
  • Sides: plenty of rice, beans, farofa, salads, and bread means less meat per plate.
  • Leftovers: want some for tomorrow? Add 10–15%.

Food safety for big cookouts

  • Keep raw meat cold until it goes on the grill, especially outdoors in Florida.
  • Use separate plates and tongs for raw and cooked meat.
  • Cook to safe temperatures: 145 °F for beef and pork steaks and chops (with a 3-minute rest), 160 °F for ground meat and fresh sausage, 165 °F for chicken.
  • Don't leave cooked meat out longer than 2 hours, or 1 hour when it's above 90 °F.
